This salad is so good even though the recipe says it serves 4 people it’s possible to eat this on your own!…. If you have the will power. BUT it’s very filling so you won’t need to eat it all …even still you will definitely want to!

Instructions
  1. Preheat oven to 425 degrees.
  2. Boil quinoa in 1 cup water or broth, such as, vegetable broth or chicken broth. Using a broth gives it so much more flavor. Boil until liquid is gone. About 10 minutes
  3. Evenly spread quinoa on lightly oiled baking sheet. Bake at 425 degrees for 5 minutes or until brown. Let Quinoa cool so it doesn't melt the goat cheese. or Add goat cheese after dish has been refrigerated.
  4. Steam mixed greens for 5 minutes.
  5. Slice olives.
  6. Mix all ingredients in bowl.
  7. Garnish with chives
  8. Best served Cold!
